skate skate skate mo'focker!



1 skate wing, 0.75 lbs - split in half
milk
flour
capers
serrano chile pepper
shallot
salt
pepper
lemon
dry white wine
parsley

submerge skate in milk for 1/2 hour

meanwhile, slice half of chile in very thin slices - discard other half or save the rest for another dish

dice shallot, use 1 tbsp

chop around 1 tbsp parsley

ready the flour for dredging

dredge skate in flour, shake off excess. season both sides lightly w/ salt and pepper

put butter (or spread) in cast iron skillet, heat until bubbling.

put one skate wing in skillet - cook both sides 2.5 minutes until slightly browned. put on plate. repeat with other skate wing. put on plate.

deglaze pan with wine. put in shallots. reduce by 1/2. put parsley, capers, more butter, and a squeeze of lemon juice in. heat one minute more.

pour over skate.
