matzo meal #2





okay first the salmon, because fish is good. throw a salmon steak into poaching liquid - i used water, onions, peppercorns, salt, dill, parsley, lemon slices, kosher wine. and heat until just cooked through. very easy. very tasty. very healthy.



okay, see that? it actually looks appetizing. prepare matzo wrapper (see post below). then boil some spinach and then squeeze out the water. chop into little tiny pieces. sliver some shiitake mushrooms and saute with diced onion. combine spinach, mushroom and onions with some dill, parsley, goat cheese and egg white. season with salt and pepper. combine well.

now lay the filling on top of the matzo wrapper. fold over one corner until it makes a nice triangle. brush the outside with more egg white and some olive oil. sprinkle a very small amount of salt over outside.

bake in oven at 400 degrees for 15 to 20 minutes.

(the egg white and olive oil on the outside of the matzoh will make the end product resemble a real pastry shell.)
