use your broiler for extreme cooking



6 endives
3/4 lbs baby octopus
1/2 lb peeled, deveined shrimp

shallots
balsamic vinegar - 2cups
sugar
olive oil

salt and pepper

drop some sugar into balsamic vinegar and mix until sugar melts - split mixture in half. drop the baby octopus and shrimp in one container of marinade and set aside.

slice endives in half, brush with olive oil and balsamic/sugar mixture from the clean container. put endives cut side down on broiler and broil until skin starts crinkling and begins to turn brown.

remove and place seafood on broiler. broil two minutes - flip pieces over and broil two more minutes.

throw seafood on endives.

as you are broiling, reduce the remaining clean, non seafoody balsamic mixture with 1 diced shallot - reduce until thick and bubbly.

pour over the seafood and endives. season with salt and pepper.
