duhh, who didn't know that? leonard nimoy (nimoy = russian niemoj "yid", literally "one who cannot speak [our language]") needed a vulcan gang sign to throw so he took the ancient blessing mudra of the kôhânîm. of course, they didn't refer to it as a mudra, but prolly neither as a "cohen gang sign".

the grave you link to, at least according to someone who reads hebrew, says:
"I can read this much of it: 'Ish tam v'yashar' which I believe means 'A simple and straight man'. There are a few letters after that phrase that I can't make out. The words aren't the kohen blessing. The hands above the words is the symbol the kohanim make when giving their blessing, though."
